Coming Together

I have been working hard to arrange a place to live and find a company to move with.

The place to live started out as a pretty large challenge; Plymouth is a very rural community and didn’t have any on-line listings of apartments or houses to rent. I got the phone number of one place from another realtor in the area, but when I spoke with them I was told they didn’t have anything available. At that point I got worried, so I called Betty at the school. She’s been my main contact person since the beginning of the salary problems, and she works in the Human Resource office. I asked her if she knew of anyone I could call to find a place to rent. She said, “I’ll call you back in 10 minutes.” True to her word, she called back and gave me a list of 9 names. Betty is awesome.

“There’s an Effing Tree on the Deck…”

I drove to my parents’ house today. I left early this morning, went directly to my Mom’s work, and surprised her. :) I’m sneaky. I came home for a lot of reasons… to spend time with family, get my cat, and some other things I want to bring to North Carolina, and plan for the move.

Tonight I went with my Mom to check on my Aunt’s cats. She is out of town… actually she and her friend rented a house on the coast of Maine for a week. So Mom has been checking the mail and the cats fairly diligently. As we were pulling up the driveway I noticed a neat magazine in the pile and mentioned it as I started to flip through. My mother said, “Oh my fucking god.” I thought this was a strange response… the magazine was just a nature one. Mom kept repeating it though, so I looked up. Then I said, “Oh my fucking god.”

A gigantic pine tree had fallen on the deck/house. I got out of the car and went closer. There were power lines all over the place, so I went down the driveway to my Aunt’s neighbor. The last time I spent time down at their house was when I was about 15; I grew up playing with his daughter, Nichole, who is 6 years my junior. I walked through the side yard, as I had done so many times before and walked up to Kevin. He was standing there with his wife, Dianne, a beautiful girl (I assumed to be Nichole… and I was right), and a boy (I’m guessing Nichole’s boyfriend). Dianne said, “Oh my god!? Katie?? The last time I saw you you were this big.” *read: holding hand up ‘this’ high* I laughed a little, looked at Kevin, and said, “There’s a big fucking tree on my Aunt’s deck. Could you come look and make sure the house isn’t going to blow up?” He laughed and followed me back up the driveway.

In the end, there is very minimal damage. The tree only damaged a small part of the deck… a couple rails and the latice work on the side. It tore power lines off the house, but didn’t damage the wires other than removing them abruptly from the siding. The electric company came out, checked the cables, and assured us that there was no danger. All the lines were completely in tact and just need to be reattached to the house. Kevin, my aunt’s neighbor, is going to work on getting the tree out of there (he’s one of those handy macho men).

I’ll take pictures tomorrow morning and add them to this entry. As Mom and I have said probably 60 times tonight: “There’s an effing tree on the deck.”

We haven’t told my Aunt yet… more on her reaction. I thought it’d be good to break the ice with this: “Carol, Kate is pregnant.” After they resuscitate her, the news of the deck will be small beans… especially when she realizes we were just messing with her about the whole me being pregnant thing. :D It seems like a great plan to me.

Three posts in one day… but I really hadn’t anticipated the news today, so the cookie post doesn’t count.

Counselor

I got a phone call from Betty, the Human Resources Director with Washington County Schools today. She told me that the state of North Carolina has approved me for three years of experience, which means that the salary will be enough for me to afford living in North Carolina. This means I can officially accept the position as a Middle School Counselor. :)
This is outstanding news, and I can’t begin to explain my excitement. I will be writing my official letter of resignation from this job and will be moving by July 15th. I have a lot of packing to do, and I’ll need to get boxes and bins, and arrange for a Uhaul.

Jake is on apartment finding detail… or house finding detail. I have a call in to the HR director to see if she knows any realtors down there.

Life is coming together. I couldn’t be happier.

Kate’s Sugar Cookies

Jake loves sugar cookies. I started baking him cookies with the following recipe last Christmas. The cookies come out light, fluffy, and buttery. They’re quite scrumptious. There is a small warning: the cookie dough is VERY soft, and somewhat hard to work with. I suggest using an ice cream scoop that has one of those little handles that helps you drop ice cream out of the spoon to help you get the cookies on the tray; use the smallest scoop you can find… melon baller size or a little larger.

3/4 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk

In a mixing bowl, cream shortening and sugar. Add eggs, one at a time,
beating well after each addition. Beat in vanilla. Combine flour, baking
powder, baking soad and salt; add to the creamed mixture alternately with
buttermilk. Cover and refrigerater for at least 2 hours (the dough will be
very soft), Drop by tablespoonfuls 2 inches apart onto ungreased baking
sheets. Bake at 375 degrees for 8-10 minutes or until lightly browned.
Remove to wire racks to cool. Yield: about 6 1/2 dozen

**That yield is slightly off. I usually get only 5 dozen out of the batter… likely because I use the ice cream scooper :)  I also suggest using parchment paper on the cookie sheets; ensures the bottoms of the cookies won’t get burnt and also makes clean up a breeze.  These cookies make great gifts, and are good for bake sales and the like. Boyfriends also seem to enjoy them!
