No-Bake Cheesecake

IMG_3921 (Medium).JPG   I made this right after July 4th, and then again over the weekend for the BBQ we had.  It went over extremely well.  It is a great, quick alternative to the traditional cheesecake.

Ingredients:

  • 2 Packages of Cream Cheese (8oz each)
  • 1/3 cup of sugar
  • 2 cups of Cool Whip
  • 1 6oz graham cracker pie crust
  • 2 cups of strawberries (halved)**
  • 1/3 cup blueberries**

Preparation:

  • Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended.  Gently stir in whipped topping.
  • Spoon into crust.
  • Refrigerate 3 hours or until set.  Arrange strawberries and blueberries in rows on top of cheesecake to resemble the American Flag

**The second time I made this, I substituted raspberries and blackberries for the strawberries and blueberries.  It was fantastic
