Slow Cooker BBQ Beef Sandwiches

Courtney gave me this recipe. The meat comes out extremely tender and flavorful.

Ingredients:

  • 1 eye of round roast or bottom round roast (3.5lbs)
  • 2 tsp salt
  • 2 garlic cloves, pressed
  • 1 can condensed beef broth (10oz)
  • 1 cup ketchup
  • 1/2 cup brown sugar
  • 1/2 cup lemon juice
  • 3 tbsp steak sauce
  • 1 tsp ground pepper

Preparation:

  • Place all ingredients in slow cooker on high for 7 hours.
  • Serve on kaiser rolls or without rolls

Jake and I both agree that next time we make this, we’ll do like half a cup of ketchup. Neither one of us likes ketchup too much, so there was a bit too much. I’ll replace that with a little more steak sauce. It was a very good dinner. I served it with steamed broccoli and cauliflower, and Parmesan noodles. Yum.

S’more Muffins

I got this recipe from a magazine I found at Courtney’s.  The muffins are absolutely delicious.

Ingredients:

  • 3 tbsp butter (softened)
  • 1/4 cup brown sugar
  • 4 tsp sugar
  • 1 egg
  • 1/3 cup sour cream
  • 2/3 cup flour
  • 1/2 cup graham cracker crumbs
  • 1/4 tsp salt
  • 1/3 tsp baking powder
  • 1/3 tsp cinnamon
  • 1/8 tsp baking soda
  • 3 tbsp milk
  • 1/3 cup chocolate chips
  • 6 tbsp marshmallow cream

Preparation:

  • Cream butter and sugars
  • Add egg
  • Add sour cream
  • Combine dry ingredients in separate bowl.  Add to creamed mixture alternately with milk.
  • Add chocolate chips.
  • Fill muffin cups 1/4 full.
  • Add one tablespoon of marshmallow per cup, and then top with the rest of the batter.
  • Bake at 400 degrees for 14-16 minutes

They come out all gooey and very yummy.  Only down side is that the recipe only yields 6 muffins.  It’s easy to prepare though, so doubling the recipe or making it twice wouldn’t be an issue.

Later tonight I might be sharing a recipe for slow cooker bbq beef sandwiches.  Courtney gave me the recipe, so I’m sure it’s going to be good (and it smells outstanding) but I want to be sure we like it before I pass on the recipe.

Crispy Parmesan Chicken

I made this recipe tonight, and it is really tasty.

Ingredients:

  • 1/3 cup Parmesan cheese
  • 1/4 cup season dry breadcrumbs
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 boneless, skinless chicken breast halves
  • 3 tablespoons butter or margarine melted

Preparation:

  • Preheat oven to 400
  • Mix cheese, breadcrumbs and seasoning in shallow dish
  • Dip chicken in butter and coat with cheese mixture.  Place in greased baking pan
  • Bake 20 minutes or until baked through

I served it with rice, as Jake and I both like rice.  You could add steamed veggies (which I will use next time) or pasta.  It’s very, very tasty.

No-Bake Cheesecake

IMG_3921 (Medium).JPG   I made this right after July 4th, and then again over the weekend for the BBQ we had.  It went over extremely well.  It is a great, quick alternative to the traditional cheesecake.

Ingredients:

  • 2 Packages of Cream Cheese (8oz each)
  • 1/3 cup of sugar
  • 2 cups of Cool Whip
  • 1 6oz graham cracker pie crust
  • 2 cups of strawberries (halved)**
  • 1/3 cup blueberries**

Preparation:

  • Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended.  Gently stir in whipped topping.
  • Spoon into crust.
  • Refrigerate 3 hours or until set.  Arrange strawberries and blueberries in rows on top of cheesecake to resemble the American Flag

**The second time I made this, I substituted raspberries and blackberries for the strawberries and blueberries.  It was fantastic

Peach Cobbler

I made this recipe last night and it was absolutely wonderful.

Ingredients:

  • 4 cups sliced peaches
  • 3/4 cup sugar
  • 1 tsp. cinnamon or nutmeg
  • 1 and 1/2 cups Jiffy baking mix
  • 1/2 cup milk
  • 1 egg
  • 3 tbsp. melted shortening.

Preparation:

  • Preheat oven to 400
  • Grease well a 1 quart baking dish
  • Combine peaches, sugar, and sinnamon.  Pour into dish.
  • Mix remaining ingredients until blended and drop by spoonful onto fruit.
  • Bake 15 minutes, then reduce heat to 350 and bake 10 minutes or until fruit is tender

You can substitute any fruit for the peaches, but I must say the peaches were fantastic.  Of course, they came to us directly from Georgia so they were quite tasty.
